Abstract: Blockchain food traceability is currently among the trending topics of the global agrifood segment. The possibility of rapidly assessing the full information of a food product, from its origin to the final consumer destination, covering every single point of its journey through the food chain, gives blockchain a promising disruptive tool that offers reliability and safety with effectiveness. Consumers could rely on the possibility of tracing the entire food path from "farm to fork" with a simple scan. This chapter provides a short introduction to blockchain theory and fundamentals, covering the most common platforms, and reviews the most recent applications to food traceability. Blockchain has the potential to be a paradigm shift if some barriers can be overcome along with its application

Abstract: Nanofibrous materials have been manufactured by the electrospinning technique due to their ease of production, potential application in various sectors and versatility, capable of producing continuous membranes at low cost and with relatively uniform fiber diameter. Electrospinnable nanofibers excel in a variety of fields, such as drug delivery, filtration, biosensors, arrangements may be modified concerning the number and positions of syringes, and static or dynamic collector, die systems. The variation of electrospinning parameters can modify the morphology and tissue engineering depending on the application and properties of interest, the experimental and composition of nanofibers, affecting the diameter, conductivity, molecular weight, and number of beads. In this sense, this chapter brings the new trends in the fabrication process of nanofibers materials by the technique of electrospinning, addressing how the effects of the parameters influence the structure and morphological characteristics of nanofibers

Abstract: Fungi derived from Antarctic ecological niches are a focus of interest due to their extremophilic adaptability. Antarctic pigmented fungi have been isolated from samples such as lichens, mosses, rhizosphere soil of Deschampsia antarctica, sedimentary rocks, snow, soil, water, and zooplankton and are shown to be promising in the production of pigments ranging from yellow, orange, and red (carotenoid) to black (melanin). The main pigment-producing yeasts belong to the phylum Basidiomycota, represented by Dioszegia, Sporobolomyces, and Cystofilobasidium. In contrast, Thelebolus and Arthrobotrys are also reported as filamentous fungi pigment producers. Among the most frequently reported biological activities of these fungi, photoprotection, antioxidant activity, and resistance to stress can be highlighted. Therefore, the Antarctic environment offers an opportunity to search for pigmented organisms that can possibly survive harsh conditions and environmental pressure. Considering the biotechnological relevance of these extremophiles, we have summarized the current understanding of Antarctic fungal pigments and their biological applications in this review

Abstract: Maté tea is a popular beverage made from the leaves and stems of the yerba-maté (Ilex paraguariensis Auguste Saint Hillaire), a plant native to the southern part of South America (Argentina, Brazil, and Paraguay). The commercial products derived from the processing of yerba-maté are used in the preparation of several types of beverages appreciated for their peculiar bitter taste and functional properties (antioxidant, stimulant, diuretic, hypocholesterolemic, and hepatoprotective). The bulk of harvested yerba-maté leaves are used in the preparation of teas (known as maté tea), a partial infusion drink with hot water (chimarrão), and a total infusion cold drink (tererê). Important compounds found in maté products are caffeoyl derivatives, methylxanthines, and flavonoids. The conditions for the processing of yerba-maté vary widely, depending on the manufacturer and the desired style and flavor of maté tea, which is reflected in somewhat diverging results on processing effects on bioactive compounds. Nevertheless, processing tends to reduce methylxanthines, such as caffeine, but increases the content of polyphenols, such as the caffeoyl derivatives, resulting in higher antioxidant activity

Abstract: The Attalea dubia and Attalea phalerata palms belong to the Arecaceae family and are commonly found in the Brazilian Cerrado. Their leaves and stems are important in handicrafts, fodder and house construction. On the other hand, the edible part of the fruits (pulp and kernel) and its byproducts have shown nutritional and/or commercial importance, as well as applications in popular medicine, which serve as a basis for scientific studies. Like many other palm fruits from the Brazilian Cerrado, A. dubia and A. phalerata have a high nutritional and functional potential that still need to be further explored. Especially, there is a need for more reliable research capable of exploring the potential of the products from Attalea as functional foods and nutraceuticals. For this chapter, consistent information will be presented as far as the botanical aspects, regional uses and consumption, chemical and nutritional compositions (fatty acids, total phenolics, carotenoids), biological applications through scientific studies (in vitro and in vivo), and technological potential of two promising palm species of the Attalea genus

Abstract: Inflammatory bowel diseases (IBDs) are idiopathic chronic conditions of the gastrointestinal tract that can lead to life-threatening complications. Although their treatments can be conveniently managed nowadays, a considerable portion of patients still complains about the adverse effects, lack of efficacy, and/or high costs of drugs and surgeries. In the pursuit of finding safer, cheaper, but still effective options, researchers have been conducting experimental studies, mostly in the last 6 years, on the potential of cereal grains and vegetables against IBDs. These crops, which are probably the most consumed types of plant-associated products among populations worldwide, have been reported as relevant sources of nutrients and bioactive compounds, especially proteins, fibers, and polyphenols, with promising antiinflammatory, antioxidative, and antidysbiotic effects on colitis. All things considered, this chapter aims to present and discuss the implications of various cereal grains and vegetables on IBDs, taking as reference preclinical and clinical experiments

Abstract: Coacervation is one of the earliest microencapsulation techniques, which has been commercially used since the 1950s. Complex coacervation involves the interaction of oppositely charged polymers in aqueous form. Gelatin-Arabic gum coacervates have been successfully produced and used in many applications, especially as vehicles for lipophilic molecules. Recently, successful strategies to encapsulate hydrophilic molecules by complex coacervation were investigated, including the production of double emulsions as a previous step before the coacervation. This technique also encapsulated particles and probiotics based on their previous immobilization in high melting point vegetable fats. Concerning polymeric materials, novel proposals based on plant proteins are growing due to flexitarianism. Also, food by-products are sources of polysaccharides, such as pectins and gums, which are sustainable polyelectrolytes to produce complexes. Complementary studies of release mechanisms are relevant to avoid the premature expulsion of bioactive compounds after incorporation in food matrixes and in vitro digestion. The scalability of complex coacervation in the food industry still needs to be explored, but combining a physical method, such as spray-nozzle, could enhance their feasibility. Thus, it is unquestionable that complex coacervation is a multifaceted microencapsulation technique, and the advances in colloid technology reflect their potentiality for the protection of bioactive compounds for food incorporation, besides many other functionalities. This protocol intends to guide the reader along the key steps to complex coacervation encapsulation, including the selection of polymers, operational conditions, the techniques for coacervate evaluation, as well as give an overview of the most critical influencing factors (e.g., concentration and proportion of biopolymers, pH, the concentration of bioactive compound, homogenization conditions, and temperature). It provides tips on how to deal with some troubleshooting, such as culturing probiotic cells before the microencapsulation, procedures for disrupting coacervates, and poor stability over shelf-life or under environmental/processing conditions

Abstract: The present book has demonstrated that natural products derived from plants have proved to be an effective and low-cost alternative for the treatment of inflammatory bowel diseases (IBD), replacing or complementing drug-based therapies. The products/substances studied demonstrated different levels of immunomodulatory, antioxidant, and antiinflammatory potential in in vitro, animal, and human experimental models. However, clinical studies are still scarce and should be further investigated to understand their role in IBD, and with that to elucidate the efficacy and safety of natural products in inflammatory bowel conditions and finally, to be able to consider them as solid therapeutic strategies. In this chapter, we will bring a conclusion with a critical view of everything that has been approached and discussed in the previous 15 chapters. In addition, we will mention future perspectives regarding the use of natural plant-based products in the therapy of IBD

Abstract: The techniques of pressurized fluids using supercritical carbon dioxide for the development of bioactive release systems have been proposed as an alternative to conventional encapsulation/coprecipitation processes as they allow improving the performance of these in terms of particle size, particle-size distribution, and morphology control, without thermal and mechanical degradation and contamination of the final product. These techniques have garnered massive attention in recent years, and their feasibility and performance have been demonstrated experimentally for several substances. Although some of them are focused on the development of products for pharmaceutical applications, their uses for the production of plant-based products with benefits for human health are growing rapidly owing to their great potential. This chapter presents the main methods with supercritical fluids that can be used successfully for the formulation of natural substances together with a biocompatible or biodegradable carrier material to form delivery or encapsulated systems with potential biological activities. These are grouped into three groups according to the role of the pressurized fluid in the process: (1) as a solvent—rapid expansion of supercritical solutions; (2) as a solute—particles from gas-saturated solutions; and (3) as an antisolvent—supercritical antisolvent precipitation. Their origin, basic processing principles, specific characteristics, and main applications with focus on human health will be discussed in this chapter

Abstract: This chapter shows the effects of high-pressure processing on milk enzymes. In general, the main endogenous milk enzymes are baroresistant and moderate pressure can activate/stabilize milk enzymes, depending on the process conditions. On the other hand, most enzyme inactivation occurs under pressures > 600 MPa. In addition to pressure, other processes parameters, such as long time and high temperature, can intensify the enzyme inactivation. Furthermore, the pH, the complexity of the ionic balance, the concentration of salts, and the presence of other molecules also affect the impact of HPP on the milk enzyme activity. Therefore, the choice of these parameters depends on the processing purpose, which can be activation, inactivation, or stabilization of enzymes. In parallel, this objective should be associated with different requirements, such as maintenance of the microbiological, nutritional, and sensory quality of milk and dairy products

Abstract: Inflammatory bowel disease (IBD) is commonly known to be classified into two major subtypes, namely ulcerative colitis (UC) and Crohn’s disease (CD). Currently, nonsteroidal antiinflammatory drugs, glucocorticoids, and immunosuppressive agents are used for the treatment of IBD, while their clinical application is severely limited due to unwanted side effects. The investigation of natural bioactive for the treatment of IBD due to the potent antiinflammatory pharmacological efficacy has become an alternative. In recent years, in vitro and in vivo experiments have shown that encapsulation of these bioactive in drug delivery systems (DDSs) can improve solubility, stability, bioaccessibility, bioavailability, and targeting capability. Abstract: The demand for safer food products is constantly growing. The methods of food authentication most commonly used involve identification of physical parameters and application of chemical methods. Recently, the called "-omics" science has gained much interest, and these technologies include proteomics, metabolomics and genomics. In food adulteration assessment, these targets can be used as markers for further determinations. However, the methods of analysis performed in these techniques usually have high cost, long period of analysis and use of reagents. Therefore, promising and innovative vibrational spectrophotometrics techniques are an alternative, as their main advantage is the capability of adaptation for online applications. The origin of the analytical information provided by the spectrophotometric methods are well known. However, the biggest challenge of these techniques is the data processing, since there is a large amount of data, and information, generated for each measurement. Therefore, they rely on multivariate statistical analyses and chemometrics to analyze the results and efficiently achieve practical results. The statistical methods in multivariate data analysis include linear (PCA, LDA, SIMCA, PLSA, PLS-DA) and non-linear models (NN, DL, SVM, RF), and their use will depend on the data nature and the desired outcome. The search for new strategies that will improve the food quality and authentication has allowed an emerged data fusion technique. Data fusion together with chemometrics has shown a great power for prediction of more reliable results

Abstract: Inflammation and metabolic syndrome are strongly associated and present health risks that cannot be neglected. Within this scenario, the intake of naturally occurring flavanones appears to be a promising option for improving these unhealthy conditions. In nature, flavanones are present in greater amounts in their glycosidic form. However, to be absorbed efficiently and bring health benefits, flavanone glycosides need to be hydrolyzed in their respective aglycones by enzymes from gut microbiota. Hesperetin and naringenin are important aglycones found mainly in citrus fruits and are reported to attenuate metabolic syndrome in addition to exhibiting potent antioxidant and anti-inflammatory effects. These flavanone aglycones naturally occur in low concentrations. Thus, there have been strong endeavors to extract these molecules from natural products and by-products, with the aim of exploring their nutraceutical potential. This chapter aims to review the inflammatory pathways with which flavanones interfere, indicating the target genes. We also compare the benefits of these compounds with drugs already available in the market. In addition, the main natural sources of hesperetin and naringenin for extraction are presented, as well as the processing forms (fermentative and enzymatic biotransformation) for a higher yield. Finally, we demonstrate how to identify and isolate the flavanones from crude extracts

Abstract: High-pressure homogenization (HPH) process is a nonthermal, nonconventional, emerging technology for continuous processing of fluid materials. It has been studied as an alternative processing for preservation of food products. Inactivation of endogenous enzymes (as polyphenol oxidase in plant-based products and proteases/lipases in milk) is an important concern for food processing, aiming to guarantee food stability and sensory acceptance during product shelf life. HPH can physically change enzyme configuration, leading to activation, inactivation, and/or stabilization, depending on the processing parameters and the enzyme. This article describes the principles of the technology; the mechanisms involved in enzyme activation, inactivation, and stabilization; and the effects on different enzymes (endogenous and commercial enzymes) and food products. Finally, it describes industrial perspectives and future challenges to HPH application for modulating the activity of enzymes with the aim of improving product quality and stability and processing efficiency

Abstract: Colorectal cancer (CRC) and diversion colitis (DC) are inflammatory-related conditions that can occur as a consequence of preexisting long-term and/or severe inflammatory bowel diseases (IBD). On the other side, obesity is a chronic low-grade inflammatory state that is said to increase the risk for IBD, considering the translocation of bacteria and immunological mediators from the adipose tissue to the gut. Given the increasing interest in handling such comorbidities or complications coming from IBD, in the last years research has been performed in order to understand not only the physiopathology behind it but also the potential benefits of alternative natural plant products. The use of berry fruits, cereals, medicinal herbs, and vegetable oils has been suggested, especially via animal models, for colitis-associated cancer, colostomy leading to DC, and high-fat diet-linked obesity followed by colitis. Considering this, this chapter aims to discuss the association of IBD with CRC, DC, and obesity, and mostly, the effects of natural plant products on such conditions
