|Title:||Study On Levan Formation During Fermentation Of Zymomonas Mohilis On Sucrose|
|Abstract:||Levan was formed from sucrose by a non-growing Z.mobilis cell suspension most markedly at pH 5 and 30°C. The formation of levan was substantially reduced at 35°C. Levan was also formed significantly during sucrose fermentation at 30°C. Fermentation at 35°C formed levan in small amount, whereas production of ethanol and C02 increased slightly. Higher concentration of sucrose produced more levan. © 1983 Kluwer Academic Publishers.|
