Abstract: This chapter presents a case study on the safety and sustainability of fresh coconut water in Brazil, now widely available in convenient plastic bottles. The authors intend to show that fresh coconut water safety and liability insurance is an opportunity and responsibility for the Brazilian government and society, as well as for other tropical countries. The safety of fresh coconut water is not only a subject of public health, but also an image presentation of a healthy and pleasant product that generates revenue for many street workers and micro-entrepreneurs. © 2014 Woodhead Publishing Limited All rights reserved.
