|Abstract:||The present invention relates to a fermented functional food on the basis of soy containing probiotics and prebiotics and a process of production thereof. The functional food contains water soluble soybean extract, water, probiotics, prebiotics, sweetening and optional food additives and functional agents. The process comprises the preparation of the inoculum and of the fermentation medium, the inoculation with the probiotics, the fermentation, optional treatments, packaging and refrigeration.|
