| Abstract: | Consideradas las diversidades y particularidades en las formaciones sociales y culturales de sus poblaciones, en el contexto de Latinoamérica, la cultura es elemento central en el debate sobre la Soberanía y Seguridad Alimentaria y Nutricional (SSAN). El presente artículo se sostiene en la imposibilidad de vislumbrar la relación de la Seguridad Alimentaria y Nutricional (SAN) sin problematizar los procesos y relaciones asimétricas por las cuales los pueblos originarios del continente y otras comunidades tradicionales vienen siendo sometidos históricamente en Latinoamérica y especialmente en Brasil. Se discutirá, en un primer momento, cómo la comida se articula a elementos identitarios centrales en la cultura. Desde esta perspectiva, es fundamental considerar algunos aspectos en sus sistemas alimentarios que diferencian dichas poblaciones de la sociedad envolvente como, por ejemplo, el territorio y la organización para la producción. Para finalizar, el artículo propone un avance en la discusión sobre la descolonización del sabor y del gusto para fortalecer los sistemas alimentarios de las poblaciones tradicionales y salvaguardar su cultura alimentaria |
| metadata.dc.description.abstractalternative: | Considering the diversities and peculiarities in social and cultural backgrounds of their populations in the context of Latin America, culture is a central element to the debate on Sovereignty and Food and Nutrition Security (SFNS). This article is supported by the impossibility of achieving Food and Nutrition Security without questioning the processes and asymmetrical relationships to which the native peoples of the continent and other traditional communities have historically been subjected in Latin America, especially in Brazil. At first, it will be discussed how the food is articulated to the core identity elements in the culture. In this perspective it is critical to consider some aspects in their food systems that differentiate these people from the surrounding society, as for example, the territory and the organization for production. Finally, the article proposes a breakthrough in the discussion on the decolonization of flavor and taste to strengthen food systems of traditional communities and safeguard their food culture |
