Abstract: Emulsions systems are used in various types of industrial applications, including different areas of interest like food technology, personal products, paints, agrochemicals, pharmaceuticals, etc. This work focuses on a study of emulsions defined by a ternary system of Chitosan/SDS/Hexane which experimental techniques like tensiometry, turbidity and flow time were essential to the preparation and characterization of this system. It is to develop a methodology to prepare emulsions containing paraffinic compounds, more biopolymer chitosan and the anionic surfactant Sodium Dodecylsulfate (SDS) which changes the load condition using intermolecular interactions such as dipole-dipole and other like hydrophobic and van der Waals forces. A higher amount of chitosan in the system (85% (V/V)) is responsible for increasing the value of the surface tension (up to 39 mN/m). High amounts of SDS (70% (V/V)) increase turbidity values of the emulsions (with a maximum value of 110.8 NTU). The largest values of flow time (27 seconds) were observed in emulsions in which the concentration of chitosan, hexane and SDS are in closest values in the composition of the emulsion.
