|Abstract:||The contamination of foods and alcoholic beverages by ethyl carbamate (EC), as well as its mechanism of formation are discussed in this review. EC induces mutagenic, teratogenic and carcinogenic effects in animals and has been considered as a potential carcinogenic substance for humans. In order to alert about the health risk due to the EC exposure, this paper deals about the occurrence of this contaminant in foods and alcoholic beverages, as well as its physical and chemical properties and analytical and toxicological aspects.|
